〜 食×Web3.0のモデルケースが誕生 〜
フードNFTコンソーシアムは、株式会社味香り戦略研究所（本社：東京都中央区、代表取締役社長：小柳道啓、以下「味香り戦略研究所」）の独自レシピ4点をフードNFTとして発行したことを2022年11月25日に開催した令和4年度総会にて発表しました。

今回発行したフードNFTは「FA NFT（Food Asset NFT）」と定義し、フードNFTの核となるレシピ味データのアセットをトークン化したNFTです。
フードNFTコンソーシアムでは、この「FA NFT」のほかに「権利／証明NFT」「商品NFT」「特典NFT」といったフードNFTの用途に合わせた種類を定義し、それぞれ最適な仕様のフードNFTの発行とその活用促進を通じて「フードNFT市場の創出」を目指します。

ウェブページの形式にてNFTを発行しました。フードNFTコンソーシアムウェブサイト上でNFTのプレビューが閲覧可能です。レシピおよび味データの詳細な数値については、暗号化しパスワードロックを設定、情報を保護しています。

■再現レシピ「だいたいウニ」
味香り戦略研究所 初となるフードNFT「だいたいウニ」は、ウニを一切使わずウニの「味」を再現するオリジナルレシピです。卵黄をベースにひじきなどを使い、見た目も追求しています。

測定校正用基準液は、味覚センサ（インテリジェントセンサーテクノロジー製味認識装置）で味の測定時の校正用に開発された溶液です。味香り戦略研究所は様々な食品に対応したいつでも再現可能な独自の校正基準液レシピを200以上保有しており、校正基準液を活用することで味分析の精度を上げています。

フードNFTとは
食品の「レシピデータ」と、味香り戦略研究所の分析技術によって味を数値化した「味データ」をパブリックブロックチェーンであるSymbolブロックチェーン上にオールオンチェーンで記録・トークン化し、再現性のあるレシピ味のデータをデジタル資産として保全し、その価値を最大活用することができるNFT（非代替性トークン）です。Symbolブロックチェーンへの味データ・レシピデータのオールオンチェーン保存とNFT発行には、「NFT-Drive」を使用しています。

are transformed into Food NFTs by Food NFT Consortium
〜A Case of Food×Web3.0〜
Food NFT Consortium has announced at the general assembly of 2022 on 25th Nov. that Taste & Aroma Strategic Research Institute (head office in Chuo-Ku, Tokyo, president and representative director: KOYANAGI Michihiro) transformed 4 items of their original recipes into food NFTs.
The food NFT produced at this time is defined as FA NFT (Food Asset NFT), whose core date is the taste data based on the recipe and it is assetized.
In the Food NFT Consortium, in addition to FA NFT, we also aim to create a food NFT market by defining, releasing and applying the optimized Ownership/Certification NFT, Trading NFT, and Privilege NFT for different usages in the market.

■Recipe Recreation 「だいたいウニ」 (Daitai-Uni: Alternative Sea Urchin)
The first food NFT from Taste & Aroma Strategic Research Institute, 「だいたいウニ」(Daitai-Uni), is their original recipe recreating the taste of sea urchin without using any sea urchin. By using yolk and hijiki (a kind of seaweed), not only the taste but also the appearance are crafted.

● Calibration standard solution for measuring tomato juice
Calibration standard solution is developed for measuring taste using the taste sensor (manufactured by Intelligent Sensor Technology, Inc.). Taste & Aroma Strategic Research Institute has more than 200 original calibration standard solution recipes, that can be reproduced at any time for various kinds of foods, as well as improve the accuracy of taste analysis.

The recreation recipe 「だいたいウニ」(Daitai-Uni) has been engineered by the original-taste-recreation-technology of Taste & Aroma Strategic Research Institute and the detailed recipe and taste data are available.
